Core spices and flavorings -
2 inches ginger root, finely chopped
2 cloves garlic, finely chopped
1 tbs cumin seeds
1 tbs garam masala
1 tsp turmeric
1 tsp salt1 tsp cayenne pepper (optional)
Secondary spices and flavorings -
1 tsp chaat masala (optional)
2 tsp tamarind water (optional)
Other ingredients -
1 lb boneless and skinless chicken thighs, cut into pieces
2 tbs oil
1 small onion, chopped
2 tbs tomato paste
1 tbs brown sugar
1/4 cup plain yogurt (fat-free or low-fat)
1/2 cup water
Heat oil in a medium sized saucepan for 2 minutes.
Add onion and cook over medium-high heat for about 8 minutes or until golden brown.
Add in the ginger and garlic and cook for another one minute.
Now add in the tomato paste and spices and cook for 2 minutes until it is well blended.
Add the chicken and mix it so that it is coated well with the spices and onion mix.
Add in the yogurt and water and stir until well blended.
Cook the chicken for about 10 minutes or until it is done.
Serve warm with rice or roti.
