Core spices and flavorings -
1 inch ginger root, finely chopped
1 clove garlic, finely chopped
1/2 tsp turmeric
Salt and pepper to taste
Secondary spices and flavorings -
1 jalapeno, seeds removed and finely chopped
Other ingredients -
1 onion, finely chopped
1/2 tomato, finely chopped
Spray some oil in medium sized flat pan.
Add the onion, ginger and garlic and cook in medium heat for about 5 minutes.
Add in the Turmeric and blend into onion mix.
Add in the eggs, tomatoes, jalapeno and cilantro and let it cook until eggs start to set.
Then use a flat spatula to break up set eggs and allow any runny portion of the egg to start setting.
Repeat this procedure until the egg is completely set and not runny anymore.
Add in salt and pepper to taste.
Serve with toast or tortilla.
