Simple and tasty. This is a simple and healthy option to the otherwise popular fried Okra. A great dish to complement lentil curry or to enjoy on its own. I enjoy it with a hot roti or even a slice of wheat bread. - Mona
Core Spices and Flavorings -
1 tsp cumin seeds
1 tsp cumin powder
1/2 tsp cayenne pepper
1/2 tsp turmeric powder
1/2 tsp garam masala
Salt to taste
Other Ingredients -
1 lb okra (chopped into small pieces)
1/2 medium onion chopped fine
2 tbs oil
1 tsp lemon juice.
Heat oil in a shallow pan and add the cumin seeds.
Throw in the onions when the seeds are cooked and cook until slightly golden.
Add the chopped okra and all the spices excepting garam masala.
Stir fry for a couple of minutes on high heat until the okra is well coated with the spices.
Add the garam masala and cover and cook on medium heat for about 10 minutes until the okra is cooked completely.
Turn of the heat and add the lemon juice and mix.
Serve hot with roti.
Tips: Never wash the okra in running water instead wipe with a damp cloth or paper towel.
