Core Spices and Flavorings-
1 tsp garlic
2 chopped green chillies (optional)
1/2 tsp red chilli powder (optional)
2 tbs chopped cilantro for garnishing (optional)
1 tbsp oil
2 tbs butter
1 1/2 cups boiled potatoes
1 cup boiled mixed vegetables (carrots, beans, cauliflower, peas etc)
1 cup chopped onions
1/2 cup chopped green bell pepper
3-4 chopped small tomatoes
1 tsp salt
1 1/2 tbs Pav Bhaji masala (available in Indian grocery stores)
1 tbs lime juice
3-4 slices of bread toasted lightly with or without butter
Heat oil and 1 tbs butter in a medium size pan on medium heat and add garlic, onions and green chillies to this.
Stir fry for a few seconds and add the bell pepper and tomatoes and continue to stir for a couple of minutes until the pepper and tomatoes are soft.
Throw in the potatoes and vegetables and mix well squashing the boiled vegetables with the back of the spatula or a potato masher.
Add the salt, chilli powder and pav bhaji masala and mix well until a thick puree is formed. Add a few table spoons of water if the mixture is too thick and is sticking to the pan.
Let this simmer on low heat for a couple of minutes then turn off the flame and add another tablespoon of butter and lime juice.
Garnish with cilantro.
Serve hot with bread.
