Core spices and flavorings -
1 tbs cumin seeds
1 tsp chopped garlic
1 tsp cumin powder
1/2 tsp red chilli powder (or to taste)
1 tsp turmeric powder
Secondary spices and flavoring-
1/2 tsp mango or aamchoor powder
3 tbs oil
2 small potatoes chopped lengthwise
1/2 lb okra slit lengthwise
1/2 onion chopped fine lengthwise
1 tsp salt (or to taste)
1/2 cup tomatoes chopped fine
1 tbs water
1 tbs lemon juice
Heat oil in a shallow non stick pan and add cumin seeds stirring quickly on high heat for 30 seconds until they change color.
Add chopped onions and continue to stir for 5 minutes or until the onions become translucent.
Add the garlic paste and mix well with the onions and cumin seeds.
Throw in the potatoes and cook on medium to high heat until the potatoes are slightly soft but not completely cooked.
Now add the chopped okra, tomatoes and all the spices (except the mango powder)and salt.
Keep stirring for 2 minutes on high heat then cover and cook on low to medium heat adding water for about 8-10 minutes until the vegetables are completely cooked.
Turn off the heat and add the lemon juice and mango powder and mix well.
Serve with hot roti or bread.
