Core Spices and Flavorings-
2 tsps garlic paste
1 tsp cumin seeds
1/2 finely chopped onion (medium size)
1/2 tsp cumin powder
1 tsp turmeric powder
Salt to taste
cilantro for garnishing
Secondary Spices and Flavorings-
2-3 green chillies
1/2 tsp red chilli powder
1 lb Fillet of fish (Baramundi, catfish, tilapia)
1tbs mustard oil
1/2 cup vegetable oil
1/3 cup tomato paste
1tbs mint chutney (recipe under chutneys)
1 tbs tomato ketchup
2-3 curry leaves(optional)
3 tbs yoghurt
1 cup hot water
Marinate fish with 1 tsp garlic paste and turmeric powder for atleast 1 hour.
Fry the fish in the vegetable oil and keep aside.
Heat mustard oil in a falt bottomed pan and add cumin seeds and curry leaves.
When the seeds are brown add 1tsp of garlic and the onion and saute.
Pour in the tomatoe paste and stir.
Add the mint chutney and continue to stir on medium heat.
Stir in the ketchup and cook for 30 seconds.
Add all the yoghurt, spices and salt to taste.
Mix well and add the hot water and turn down the heat.
Once the sauce is done arrange the fish fillets in it and flip them so that the pieces are covered in the sauce.
Garnish with chopped cilantro.
