Core Spices -
1 tsp cumin powder
1 tsp turmeric powder
Other Ingredients -
1 large eggplant, peeled and sliced into circles
1/2 cup olive oil
2 to 3 tbs Balsamic Vinegar or to taste
1 tbs onion powder, or to taste
1 tbs garlic powder, or to taste
Salt and Pepper, to taste
4 hamburger buns
Mozzarella cheese, sliced into 8 pieces
1 or 2 tomatoes, sliced
Preheat oven to 400 degrees F.
Arrange eggplant pieces on a non stick baking pan.
In a small bowl pour the olive oil.
Add in the balsamic vinegar, onion, powder, garlic powder, cumin powder, turmeric powder, salt and pepper.
Brush olive oil mixture onto the eggplant pieces - both sides.
Bake the eggplant pieces for about 20 minutes or until golden brown.
Toast the hamburger buns.
Place slices of eggplant on the toasted bun and place the mozzarella cheese and tomato on top.
Sprinkle with basil for added flavor.
Serve warm as is or with pesto sauce.
