Core spices and Flavorings-
1/2 tsp cumin powder
1/4 tsp chilli powder
1tbs chopped cilantro
Secondary Spices and Flavorings-
1/2 tsp black pepper
1 tbs oil
1/3 cup finely sliced onions
4-5 mini pepper (different colors preferably to give the dish a nice color)finely sliced
3 scallions chopped fine
2 ears corn
1/2 tsp salt or to taste
1 tbs chopped tomatoes (fresh or canned)
1/3 cup milk
1tsp lemon juice
Heat oil and fry the onions and scallions until the onions start sweating.
Now add the corn, peppers, tomatoes and spices and cook on medium heat for 5 minutes.
Add the milk, cover and cook for another 5 minutes or until the milk almost evaporates.
Turn of the flame and add the lemon juice, garnish with the cilantro and serve over rice or on its own.
Tip: Corn should not be over cooked in order to retain its crunchiness and nutrition.
