Core spices and flavorings -
4 tbs ground black peppercorn
4 tbs coriander powder
3 tbs cumin powder
1 tbs salt
Secondary spices and flavorings -
3 tbs ground yellow mustard seeds
Other ingredients -
Six 6-ounce strip loin steaks, about 1 1/2 inches thick
3/4 cup canola oil
Stir all the spices together and add in the salt.
Dredge the steaks in the spice blend until completely coated.
Preheat the oven to 350 degrees F.
Heat half the oil in a large skillet over moderate heat and sear 3 steaks on one side for about 3 minutes.
Turn the steaks over and transfer to a baking sheet.
Cook the remaining steaks the same way using the remaining oil and transfer to the baking sheet.
Put the baking sheet in the middle of the oven and cook the steaks (without turning them) for about 10 to 15 minutes, for a medium meat.
Transfer the steaks to a platter and serve.
