We plan on cooking up our own banquet to celebrate Chinese New Year. However, our recipes are all part of the famous Indian-Chinese cuisine. This cuisine adapts Chinese seasonings to Indian tastes and was first said to be developed by a small Chinese community that has lived in Kolkata (India) for over a century. Most of the recipes were created by people of "Hakka" origin in China, and therefore it is also often referred to as "Hakka" cuisine. In fact we can recall many delicious memories created at Calcutta's Tangra neighborhood or Chinatown where we ate some delicious Indo-Chinese delicacies.
