In keeping with our season of pumpkins, and incorporating a menu item for Diwali, here is an absolutely delicious and healthy recipe for Pumpkin Potato Cakes (thanks to my mom). Potato cakes, also known as "Tikkis" in India, are a popular and well-loved snack. They are typically pan fried, but this baked version is just as delicious. The pumpkin adds a subtle sweetness to this flavorful, tangy food. This would be an ideal appetizer or finger food for Diwali. Core Spices and Flavorings -
1/2 tsp turmeric
Secondary Spices and Flavorings -
1/2 tsp black mustard seeds
Other Ingredients -
1 tbsp oil
1 cup grated pumpkin
3 small potatoes, boiled and mashed
1/2 jalapeno, finely chopped
2 inches ginger root, finely chopped
2 cloves garlic, finely chopped
1/2 tsp salt
1 tbs lime juice
4 - 5 tbs bread crumbs
Preheat oven to 350 degrees F.
Heat oil in a medium pan over medium-high heat for about 1 minute.
Add in the mustard seeds, ginger, garlic, turmeric and jalapeno and cook for another minute.
Add in the pumpkin and cook for 2 to 3 minutes.
Add in the mashed potato and cook for about 1 minute until well blended.
Remove the pumpkin mix from the heat and let it cool for about 10 minutes.
Add in the salt, lime juice and bread crumbs and mix well.
Form about 6 round patties with flattened tops.
Place the patties on a greased oven safe dish.
Bake in the oven for about 30 minutes.
Tips: If you want the potato cakes to have a browner top, just keep it in the oven a little longer. You may even lightly spray the tops of the potato cakes with a little oil for a deeper brown.
Feel free to add additional ingredients such as onions and cilantro for added flavor.
