Here it is - a delightful recipe for tacos. And, don't get turned off by the word "Vegetarian" (if you are a meat eater). These tacos are so delicious and so satisfying, I was stuffed after two. Thanks to my dear husband, Mike. Can't wait for him to cook up some more dishes. - Shalini
For the Filling:
Core Spices and Flavorings -
1/2 tsp cumin powder
1/2 tsp coriander powder
1/2 tsp chili powder
Other Ingredients -
1 tbs olive oil
1 small yellow onion
1 stalk celery, chopped
1 green bell pepper
1 serrano pepper, deseeded and minced
1 clove garlic, minced
1 can (15.5 oz) garbanzo beans
5 tbs of your favorite salsa (we used the green verde salsa)
8 taco shells (soft or hard)
Suggested Taco Toppings:
Shredded cheddar cheese
In large fry pan, heat oil over medium heat.
Cook the onion, celery, green bell pepper, jalapeno, and garlic until softened.
Add garbanzo beans, cumin, coriander, chili powder, and the salsa.
Stir until heated through.
Fit the taco shells in a baking pan, spoon in filling evenly into the shells and bake in a 300°F oven for 5 minutes or so. It helps the shells from falling apart when you take the first bite.
Remove from oven and top with your favorite toppings.
