Core Spices and Flavorings-
1/4 tsp turmeric powder
3 large unripe mangoes, peeled and cut into 1- to 2-inch pieces
2 tbsp oil
1 tbsp of five seeds or panch phoran (see recipe)
1 tsp salt
1/2 cup water
1 cup sugar
1/2 tsp black salt
Heat oil and fry turmeric powder briefly.
Add the panch phoran seeds to the oil and fry till they start to splutter.
Add the mango pieces and salt.
Stir and fry till the mango pieces are well coated with spices (do not brown).
Add water, cover and simmer until the mango has softened.
Add sugar and cook until syrup thickens and the mango is very soft, stirring occasionally. (You can add a little more water if mango starts to stick at any point.)
Add the black salt and stir.
Let cool and store in a sealed glass or ceramic container.
